Spring form pans are primarily used for cheesecakes and delicate or frozen desserts. It is made of heavy gauge metal and comes in two pieces. The flat bottom base fits in a groove in the outer band when a latch is opened. When the latch is closed, it locks the bottom to the band. When a dessert cooking on the bottom is ready, the latch on the band can spring open, hence the "spring" in "spring form." The finished dessert will remain on the bottom base.




Instructions

1,Practice latching and unlatching the band and removing it from the bottom before you attempt to cook anything in the pan. The bottom should be firmly in the groove of the band; you should not be able to push the bottom up or out of the bottom of the band.




2,Most Spring form pans are 9 or 10 inches in diameter. Most pans come with interchangeable options for its base. It can be either a smooth, round platform or carry a waffle-like pattern. Allow the recipe you're making to determine which one to use. Most cooks use the patterned bottom for cheesecakes or heavy creations, and the smooth bottom for frozen desserts.




3,Follow the recipe and assemble the dessert in the pan. If it's a cheesecake, it needs to be chilled thoroughly in the pan before the outer band is removed, or it may crack or fall. Frozen desserts may need to be prodded away from the pan with a gently warmed knife. Run the knife for a few seconds under hot water, then run the knife around the inside of the loosened band.



Tips & Warnings

If your recipe calls for your dessert to be baked in a bain-marie, or water bath, test your pan for leaks first. Set it in an inch or so of water. If it leaks, place the pan on two sheets of heavy duty foil and bring the foil up the sides of the pan. Due to the heat reflective quality of foil, some desserts, like cheesecake, may need their baking times extended.



To protect the base from knife scratches, place a circle of parchment paper on the base before adding your dessert mixture. You can also use the paper to gently slide the dessert from the base to a serving plate.



Wash the pan dissembled if you want to put it in the dishwasher. Hand wash them with warm soapy water and a soft cloth. Pay special attention to the latch area during washing, and the rim where the base joins the band.



Butter-based crumb crusts can stick to the base. Heat a wet towel in a microwave. Set the pan on the wet towel. The heat will soften the butter just enough to allow the pieces to be lifted off the base.



The Spring form must be stored in an area where it won't get banged around. Too much contact will cause them to bend and warp. Store them latched to help them retain their shape.
